2017 was the start of a new chapter for me. I was taking care of my 4 year old during the day then putting him to bed at night so that I could start my second job, baking. Friday nights I baked until 2 or 3 in the morning, napped for a couple of hours and got up with the sun. I would pack everything into the car and head downtown to the Saturday morning market. I must have looked crazy at times, pushing a huge cart down the sidewalk with a toddler in tow. I know now that my determination outweighed everything else. There was no allergy-friendly bakery for us. We couldn't just go and grab a doughnut and call it a day. Reading ingredients had become my life. I decided to get in the kitchen and experiment until I found something that we liked. It made me so happy to see my son devour a chocolate cupcake for the first time (I cried). I wanted others, like us, to have their cake and eat it too!
